Job Details: Supervises the activities of assigned restaurant and kitchen staff including scheduling, maintaining inventory, and assuring a quality product is served to guests in a timely manner.

Completes all necessary paper work and performs other duties to maintain a smooth, orderly operating kitchen.

Summary of major responsibilities include interviewing, selecting and training employees; conducting performance reviews; recommending wage increases and promotions; handling employees' complaints and disciplining and/or recommending discipline and supervising work.

1. Supervises the preparation of all food in assigned restaurant.

2. Performs frequent checks of assigned kitchen areas and assists in food production when volume requires participation.

3. Maintains the prescribed standards for quality, quantity and appearance of food prepared in assigned kitchens through effective guidance, counseling and instruction of assigned personnel.

4. Utilizes menu engineering for the efficient operations of the restaurant.

5. Aids in the creative execution and presentation of all food products, including innovative plating presentation.

6. Maintains adequate supply of food stock for the needs of assigned kitchens; controls ordering to eliminate waste and keeps sanitary conditions at acceptable standards.

7. Encourages cooperation between assigned food preparation personnel and food service personnel to ensure quick and efficient service from the kitchen.

8. Maintains all facilities and equipment in clean and operable condition in assigned kitchen, including performing frequent inspections of all assigned areas.

9. Fully in charge an responsible for the activities of assigned kitchen.

10. Assures adherence to all safety policies and procedures and reports any safety hazards to the Executive Chef.

11. Recommends changes, including hiring, promotion, demotion and release of personnel; recommends wage and salary adjustments for personnel within established guidelines.

12. Prepares and coordinates the periodic performance appraisals of assigned personnel.

13. Establishes and maintains adequate and appropriate work histories on assigned personnel.

14. Performs administrative, payroll and personnel duties in regard to personnel as assigned.

EDUCATION: High school graduate or equivalent and some culinary school preferred EXPERIENCE: Six to eight years experience in high volume establishment; Experience in all phases of food preparation; some supervisory/administrative experience ABILITIES

2. Ability to supervise and guide/counsel subordinates.

3. Ability to establish and maintain communication in all directions.

4. Ability to complete and maintain all necessary paper work in a timely manner.

5. Ability to work as a team.

6. Fluent and literate in basic English.

7. Auditory range must include immediate environment.

8. Ability to taste, smell, determine color variations, walk, stand, hear and good close/distance vision.

9. Ability to maintain composure under stressful situations.

10. Ability to work in varying temperatures.

11. Manual dexterity including using all kitchen tools and equipment.
