In a proper working environment, it is extremely stressful

when you aren't on a break you have to be working extremely hard to sweaty levels

it can get quite hot

hours can vary from shops

some exclusive boutique-style establishments won't be open as much as somewhere such as Patisserie Valerie, often they start early in the mornings (6-7am) and can go on as late as 11pm

Pay can be really rubbish, because the ones who earn loads are highly renowned, famous pastry chefs who graduated from prestigious pastry schools and did that three year program thing that most people fail

its very enjoyable, but there is inevitably lots of stress in a good business.
