How can I make this work?

I've been consulting with a couple who own and run a local cafe and are looking to expand and seeking my services. I am a Professional Cook/Chef who's goal has always been to open my own place but I just don't have the money. I currently work in a government business and although I really don't like it and would love to get out, I am making above average wages for this industry and I know that most places, including these cafe owners can not compete with. Is there some type of arrangement I could suggest where I wouldn't be just an employee but a partner (for example) that we would all benefit from?

It's really quite doubtful that the cafe owners want to bring in another partner. In fact, even if they did so, your pay for your work might actually be lower since you would be a part-owner. It wouldn't be until the cafe really, really, takes off (if ever) that you would earn big $$$. That doesn't happen too commonly in the cafe business.
